From acclaimed biochemist and Dr. Mary Enig comes this crucial book about the nutrition of fats and oils. That’s right, nutrition. Natural fats and oils are nutritious foods that don’t just provide fuel for the body. With fat-soluble vitamins A, D, E, and K, they’re also a superior source of nutrients.
Backed by solid, evidence-based information, Enig’s book covers fats from A to Z. She explains the critical difference between natural and synthetic fats, the science behind the roles of natural fats in the body, and the role of natural fats in dieting. She also answers a slew of frequently asked questions about this maligned substance. So if you’ve been made to believe that fat is bad or causes weight gain, read Know Your Fats. You’ll come away with more knowledge on this misunderstood subject than most health “experts” out there today.
From Amazon Customer Reviews:
“Dr. Enig explains, in an easy to read and unbiased format, the truth about fat and cholesterol. I thought I knew it all as a dietitian, but this book changed everything. The science is solid. This book needs to be a textbook in every medical and dietetics school. When the healthcare providers know the truth about fat and cholesterol we will finally be able to prevent chronic disease and obesity. It’s time to stop our insane and unscientific attack on saturated fat and cholesterol. How can we possibly believe that man could improve on what God has made? This book provides everything you need to know to make an informed choice on fat.”

“At last a definitive treatise on fats and oils. The facts are presented clearly and it is easy to make healthy decisions on what and what not to eat.”
“This is the best book I have read about all of the various fats. This author is very well versed in the composition and use of the fats and oils and does a great job is separating the science from the nonsense. The authors credentials are impressive and she is truly a terrific researcher and author. After reading this book you will know all that you need to know about fats and their role in our bodies. Professional work.”
“Can’t add much to the reviews already, but I can add my lab results following the recommended fat intake from this book. I had a somewhat bad HDL/LDL ratio following the USDA pyramid. My doctor wanted to put me on meds to reduce cholesterol. I thought there must be a better way, since I’m still kinda young and physically “fit.” Researched more on fats and cholesterol, and stumbled across some folks that went against the grain. I ended up taking in MORE animal fats, less trans fats, as well as less refined sugars (separate topic). The results over a three month period are as follows: CHOL 257—>176 Triglycerides 63—>33 LDL CHOL 195—>127 HDL CHOL 49—>42 CHOL ratio 5.24—>4.19. Although I now don’t worry about cholesterol so much, this was sufficient to keep my doc from putting me on meds. =)”
“This book is quite detailed and provides excellent information about dietary fats. I’ve thrown out the canola oil and margarines and have switched to pure coconut oil, olive oil, and real butter. I’m no longer afraid to feed my kids a healthy amount of fat with the understanding that good fats are needed by the body. By eating enough healthy fats (and more protein), the cravings for sugars decrease dramatically. Read this book along with books related to low-carb eating…Americans are going about their “diets” all wrong!!”
