Lactose-intolerant? No problem! Learn how to make lactose-free yogurt, kefir, and cultured cream!

This class has four sessions. All classes are on Wednesdays, June 1, 8, 15, and 22, 10:00am MT – 11:30am MT. Each class will have time for Q & A.

Sessions are as follows:

Class One, Wednesday, June 1: Introduction to Dairy. The foundation class. Don’t miss it! What is dairy? Why do we culture it? What role does cultured dairy have in the GAPS Nutritional Protocol? How to work with raw and pasteurized milk, and so much more.

Class Two, Wednesday, June 8: Cultured Cream/Crème Fraiche/GAPS “sour cream”. Learn the different techniques to culture cream. Raw vs. pasteurized. To heat or not to heat? Different starters. And…cultured butter!

Class Three, Wednesday, June 15: Yogurt! Raw milk and pasteurized. Lactose-free! Different starters and different methods. Timing and temperatures. Yogurt cheese (GAPS “cottage cheese”), how to make it, how to serve it. Whey!

Class Four, Wednesday, June 22: Kefir! The microbial powerhouse! Milk kefir and kefir cream. Kefir whey and kefir cheese. Grains and starters…previous batch. Lactose-free!
