We all know the old saying touting breakfast as the most important meal of the day—and there’s a ton of truth to support this philosophy. Making breakfast a priority sets the stage for balanced blood sugars and reduced food cravings throughout the rest of the day.
But not all breakfasts are created equal, right? The real breakfast of champions is a meal that gives your body and brain the right fats and proteins for clear thinking, sustained energy, and steady blood sugar levels. Around our house, eggs and all the wonderful nutrition they deliver are at the top of the list. I even found a simple bacon soufflé frittata recipe that our youngest—the unenthusiastic egg eater of the family—will devour. Serving this breakfast makes me happy because everyone leaves the house ready to roll. Follow it up with a midmorning snack of homemade applesauce or apple slices, and it’s lunch before the first hunger pangs lead to any growling tummies.
But after days and days of egg variations, my boys begin to protest. They want something different, something that doesn’t make them think, “oh, look…Mom made eggs again.” They want something that may even feel like an early morning indulgence. Like waffles. Even though I always use whole grain flour to make waffles, that doesn’t mean I’m crazy about the idea of pulling out the waffle iron on a regular basis.
